My Pancake Recipe (Fast)

Ingredients

1/4 cup vegetable oil1/4 cup white sugar

1 cup flour

1/2 tsp salt

1 tsp baking powder

1 tsp baking soda

1/8 tsp vanilla

1 large egg

1 cup milk

1. Add flour, sugar, salt, baking soda, and baking powder (may add upto an additional 1/2 tsp baking soda for even fluffier pancakes) and mix thoroughly.

2. Move mixture out of center of bowl.

3. Add egg, milk, oil, and vanilla to center of bowl and mix together to blend egg with other fluids.

4. Quickly incorporate the rest of the dry mixture into the wet. Mixture should be a bit lumpy and reasonably fluid. (A bit more milk may be required.)

 

Cooking

  1. Preheat griddle. (Pan should be hot.)
  2. Grease the pan with small amount of butter.
  3. Pour batter into pan, making one or more circles of the desired size.
  4. Flip pancake when center is full of bubbles and edge looks firm and a bit dull.
  5. When flipping the pancake give it a little snap to “splash” the uncooked batter a bit, but not a lot.
  6. Remove from pan after roughly the same amount of time from pour to flip has elapsed.
  7. Target colour is dark golden brown on both sides which will depend on the pan used and the temperature of the pan.
